Terrine
500gms of lean pork mince
500gms of lean chicken mince
Garlic to taste
1 small onion finely grated
½ cup breadcrumbs
1 teaspoon of mustard (own preference)
2 eggs
6 rashes of prosciutto
Mix all together
Line terrine dish with prosciutto and pour the mixture into the dish
Place in a dish that has been half filled with water
Cook in a moderate oven for approximately 1 hour
Take out of oven and place a weight on the top and refrigerate
Healthy meatballs
Pork mince 500gm
Water cheastnuts(small tin)
1 egg
Garlic ( to taste)
Salt & Pepper (to taste)
1/2 cup of breadcrumbs
2 tlb spoons of soy sauce
2 tlb spoons of fish sauce
1 tlb spoon seasame oil
Mix all together and roll into balls, place in a small deep dish tray and cook for 45m in a moderate oven
